There are many recipes out there for leek and potato soup but most use additional ingredients that are not necessary. As well as being unnecessary they are usually unhealthy. So join me as I show you how to make a healthy leek and potato soup.
How To Make A Healthy Leek And Potato Soup
I could just as easily called this how to make a simple leek and potato soup, because not only is it healthy, it’s also easy to make. With no additives at all it is the healthiest and easiest soup recipe I know. Which suits me as I’m no chef.
Ingredients For A Healthy Leek And Potato Soup
For a large pot with enough to feed 4 adults, you will need:-
- 2 Large Leeks
- 3 Large Potatoes
- 1 Medium Onion
- 4 Pints of Water
- 3 Tablespoons of Boullion Powder
Method For A Healthy Leek And Potato Soup
Peel and cube 2 of the potatoes and add to the pan of water. Chop the leeks and the onion and add to the pan. Peel and grate the remaining potato into the pan.
Add 3 tablespoons of boullion powder and stir away all traces of the powder. Bring the pan to the boil and simmer for 20-25 minutes. Then you can if you wish pour into a blender and then reheat, or just serve as is.
Additional Ingredients
For me the above is the finished soup but some people like it creamy, if this is the case you can add low fat plain yogurt or crem fraiche if you prefer. This won’t be too unhealthy but I like to just use the vegetables. The reason for grating the third potato is to thicken the soup.
So that’s it easy, healthy and fast, with hardly any preparation at all. Believe me if I can make it then anyone can. I like to serve it with fresh crusty bread and season with freshly cracked black pepper.
